New year around the corner, he tells us about the festive wines. Champagne according to him is the best seller as it being a symbol of romance and beauty. It is a celebration of victory or festival. It has luxury, temptation, and romantic color, but also the great wine to do aperitif and with the food! Some great champagnes are Pierre Peters Cuvée Speciale "Les Chétillons" Blanc de Blancs 2008 and Vintage 2008. They are better than others because of its finesse, minerality, purity, lightness, directness, freshness and elegance. Although consumers here in China prefer wine from Bordeaux and Burgundy of the French, Sake wines are also getting better in Shanghai!

Also, Wine by the Glass program is getting popular here. This program not only increases the income of the restaurant but also gives a wonderful experience for the guests. Talking about wine programs, it should be changed every month. Major component affecting the wine program is suppliers. Sometimes, some wines are out of stock which can hamper the wine list at your restaurant whereas sometimes they have really good fine wines, which you might want to add in your list.

Lastly, talking about sustainability and wines; sustainability, biodynamic, organic and natural wines are upcoming trends. I believe, China will soon follow this from New Zealand.
